Unless I did this wrong, 1500 UTC translated to one hour earlier than the meeting took place in my timezone. I'm wondering if the meeting is actually at 1600 UTC now?

You're probably in a daylight savings time area and the way you are converting isn't compensating for it.
$ date --date="1500 UTC" Wed Apr 6 10:00:00 CDT 2016

we recorded the demo, but the recording seems to have no audio - working with the provider there to get that fixed, as soon as I have it, will pass the url along
